A courtyard, before
it was a restaurant.
Amrit Courtyard began as exactly that — a courtyard. A quiet stone patio behind an old family house, a tandoor built into one corner, and relatives who couldn't stop feeding whoever walked through the gate.
We kept it that way on purpose. The lamps are still hung by hand every evening. The dal still simmers for six hours. And the tables — mismatched, on purpose — still spill out under the tree the way they did the first year we opened. We did add one thing since: a proper air-conditioned hall indoors, for the afternoons the courtyard gets a little too honest about the weather.

Three things we believe
about a good table.
"Slow food, fast fire."Everything comes off real coal and wood, cooked to order — which means dinner takes a little longer, and tastes like it.
"Long tables are a policy, not an accident."Ours seat six by default. Pull up a chair — we'll bring another one.
"The dal is not a side dish."It simmers for six hours before anyone orders it. Most tables order it twice.
